QUALITY
When you taste our caviar, you taste some of the highest quality caviar in the world. Our experienced staff uses state-of-the-art technology and expertise to hand-pick each fish for superior meat and caviar. We do not us harmful additives like borax.
SUSTAINABILITY
Our facilities adhere to U.S. environmental standards. Through sustainable aquaculture, we aim to counter the poaching of critically endangered Russian sturgeon from the Caspian by offering domestic caviar as a superior alternative.
PURITY
Our Recirculating Aquaculture System assures the the highest level of filtration. We breed pure Russian sturgeon for genuine Osetra caviar (no hybrids). We do not use growth hormones or antibiotics. The only ingredients in our domestic caviar are roe and salt.
Domestic caviar in the U.S. can come from several types of sturgeon.
Osetra (also Ossetra, Oscetra) caviar refers specifically to the roe of Russian sturgeon (Acipenser gueldenstaedtii), referred to as the Persian sturgeon (Acipenser persicus) in some regions.

The “Osetra” label is reserved for Russian sturgeon caviar the way that the label “Black Angus” beef can only come from the exceptional breed of cattle that bears that name.
