Russian Sturgeon Fillets

Buy sturgeon fillets from Marshallberg Farm, the largest producer of Russian sturgeon in the United States of America. Russian sturgeon (acipenser gueldenstaedtii) are originally from the Caspian Sea. Due to overfishing and poaching, these convened fish have been highly unavailable until recently. Marshallberg Farm raises Russian Sturgeon for meat and caviar. These fish yield a large and thick fillet weighing 8-10 pounds. The fillets make excellent steaks, and should be prepared with similar methods as veal or pork. Sturgeon fillets do best when slow cooked. They can then be grilled, sautéed or fried. If you are looking for a whole fish, Marshallberg Farm also sells bullets. This is the entire body minus the head, fins and tail. You can get up to 80% meat yield since sturgeon have no bones (only a spinal cord). Sturgeon farmed in the U.S. is given the green light by many sustainable seafood guides including the Monterey Bay Aquarium Seafood Watch.
