Roast Sturgeon
Oven temps vary, and personal taste will play a role in how you like your sturgeon roast. In general, you can follow the same general recommendations as roasting a ham, since the meat density is very similar. Place sturgeon roast on a rack in a shallow roasting pan. Bake uncovered until the internal temperature reaches 140° (35 minutes per pound for a 4-5lb roast), or as personal taste dictates. Most prefer the meat to fall apart when poked with a fork, and the skin to be crispy as to easily separate from the meat when eating. Season on your plate with your favorite fish seasoning. A simple combination of olive oil drizzle, lemon, salt and pepper are recommended. Sturgeon meat is very mild so it takes on flavors very well.
