Farming is the only legal way to attain the meat and roe of this species, and is also an important component to species conservation. Russian sturgeon produce Osetra caviar. This roe is known for its golden colors, nutty flavor and firm texture. It takes these fish up to 10 years to produce their first batch of roe.
