Excellent fillets, I dry brined (kosher salt & turbinado cane sugar and “additional spice”) timed by weight of each fillet. Basted with a bourbon (10yr old) and a small amount of home made maple syrup overnight and smoked with cherry wood for 5 hours at 140 degF. chilled, sliced thin and served on homemade hard bread with smoked gouda cheese, delightful. Reminiscing of days gone by when I used to catch wild caught native sturgeon in Oregon. Will purchase again.

Fresh sturgeon is different from most fish I’ve tried, and initially I wasn’t sure how to prepare it. I’ve found I enjoy simply marinating it and then broiling for a few minutes per side. The flavor is mild, has no fishy smell, and has a firm, meaty texture. I think it cooks up similar to swordfish but with a milder flavor. Very good!
