Bake, chop, sizzle.
I like to bake sturgeon fillet covered, in the oven at 350 for about 30 min. This removes some of the water in the meat, assuring no rubbery texture. Then I chop the meat into cubes, pour on a teriyaki marinade and put on skewers. With the grill already sizzling hot, I add the kebabs, leaving the grill open. Grill just long enough to caramelize and get some nice grill marks. Super good!
